Bor Choi Spinach with garlic 蒜 蓉 菠 菜
As a child my Aunty Florence would say to me and my bro…. if you two want to be as strong as Popeye the cartoon sailor man you better eat all your Bor choi aka spinach. If you have seen the cartoon as a child you might remember that Popeye pops a can of spinach into his mouth before he beats and bashes someone in!
Thankfully I didn’t have to eat spinach from a can! Imagine the horror on my face! Grandma would get a whole bunch fresh from the markets. I cannot say it made me stronger physically but mentally at the time I thought I was so strong that I used to challenge my bro after eating this Bor Choi aka Popeye`s spinach!
Anyways Bor choi is a very leafy green vegetable, packed full of minerals and antioxidants. I really like this vegetable they go so well with garlic. That’s extra antioxidant for me! There is a reason why so many Chinese people love eating vegetables.
Garlic is always used with vegetables as garlic enhances the natural taste of the vegetables. Garlic is also full of antioxidant and antibacterial properties so more in my vegetable please! If you are not a fan of garlic then just use 1 small clove instead of three.
Bor Choi aka Popeye`s spinach in it`s raw, uncooked state. The veg that makes me want to fight. LOL!
Serves: 3-4
Prep Time: 5 minutes
Cooking Time: 2-3 minutes
Ingredients
250-300 grams Bor Choi
3 garlic cloves
2 tablespoons water
1 tablespoon groundnut oil
1 tablespoon light soy sauce
½ teaspoon salt
½ teaspoon sesame oil
Method
• Wash Bor Choi under cold running water and soak in a pinch of salt for 5 minutes, drain well and set aside.
• Unpeel and smash the garlic with the back of your knife, finely chop the garlic cloves, set aside.
• Heat a wok on medium/ high heat, once hot add oil, garlic and stir fry for 10 seconds.
• Add Bor Choi, stir fry for 30 seconds, add water, salt, soy sauce and stir fry for 1 ½-2 minutes. Add sesame oil and serve.
