

Winter Clay pot Comfort (because cold weather deserves hot food 
)
This cozy winter claypot is made for colder days when you want something fast, healthy, and deeply comforting without standing in the kitchen for hours. One pot, minimal effort, maximum flavour — we love an efficient queen.
The mung bean noodles soaks up all the savory goodness, the pork keeps it hearty, the prawns add sweetness, and the enoki mushrooms?
They sneak in with a slightly meaty bite that somehow makes everything taste richer and more indulgent… without actually being heavy. Sneaky, but we approve 
What you need
• 2 bundles mung bean noodles
• 8-10 prawns, peeled & deveined
• 400g minced pork
• Onion & garlic
• (Chinese cabbage)
• Enoki mushrooms
• Spring onions
• Light soy sauce, oyster sauce, Shaoxing wine, sesame oil
• White pepper, cornstarch
• Chicken stock or water
Tofu optional at the end!
How to make it
- Marinate minced pork and prawns for at least 30 minutes (flavour takes time, beauty).
- Sauté onion and garlic until fragrant. Add soy sauce & oyster sauce, let it bubble, then set aside.
- Wipe pot clean. Line the base with cabbage leaves (nature’s non-stick mat).
- Add mung bean noodles directly on top.
- Spread marinated pork evenly over the noodles.
- Layer enoki mushrooms on top — trust the process.
- Pour the onion-garlic sauce over everything.
- Add chicken stock until halfway up the pot. Cover and simmer low for 10 mins.
- Add prawns, tofu on top, cornstarch water, cover and cook another 6-7 mins.
- Finish with spring onions and serve hot!
