Stir Fry Bright Lights Spinach Beets with Chilies 辣 椒 翻 炒 明 亮 的 燈 光 菠 菜
Bright lights Spinach beets aka Swiss Chards comes in different colours. Bright red, green, orange and yellow! They are high in vitamins A, K and C, also rich in minerals, dietary fiber and protein.
They make a nice change to the usual green colour veg, adds a pop of colour to vegetables during the Summer and I am sure the kids will love these colours too! Hopefully they will eat more of this nutritious vegetable. They can be found in Chinese supermarkets but if they do not have it then try the bigger supermarkets such as Morrisons.
All you need is 3 FRESH ingredients, 4 store cupboard goods and 3 QUICK METHODS! BOOM!! A fiery veg dish in under 3 minutes!!

Ingredients
600 g bright lights Spinach beets/ Swiss Chards
2 garlic cloves
1-2 red Thai deseeded chilies
10 ml hot water
1/2 tablespoon groundnut oil
1/2 teaspoon sesame oil
Pinch of salt and few dashes of pepper
Methods
• Wash spinach beets/chards, drain, cut in halves and set aside. Using a mortar and pesto pound the garlic and chilies into a fine paste.
• Heat a wok on medium/high heat, add oil. Once hot, stir fry the paste for 10 seconds before adding the spinach/chards. Stir fry for 20 seconds.
• Add hot water, sesame oil, salt, pepper and cook for 1+ 1/2 minutes on a high heat. Enjoy.
