Tomato and beef soup 番 茄 牛 肉 湯
This is a super quick and easy Light Summer soup to make. Jammed packed full of iron and vitamin C. If you don`t like eating so much vegetables and much prefer meats in your soup then this is the soup for you! Prep Time: 5 minutes
Cooking Time: 15 minutes
1 litre hot boiling water
1 beef stock cube
200 g rump beef
6 good quality tomatoes
1 tablespoon cold water
1 teaspoon corn flour
1 teaspoon caster sugar
½ teaspoon salt
4 dashes black pepper powder
• Cut beef into strips. Place into a pot of hot beef stock and boil for 1 minute on a high heat setting. Remove beef strips and set aside. Skim away any brown scum floating on the broth.
• Add all the chopped, small cubes tomatoes into pot. Add salt, pepper and caster sugar. Lid on and boil for 12 minutes over a medium heat.
• Mix corn flour with cold water, add into pot. Return the beef back into the pot. Continue to boil for 2 minutes. Serve.
