Recipe
Black Bean Squid and red pepper stir fry 黑 豆 魷 魚 紅 辣 椒 翻 炒

Squid are the ideal sea foods for stir fry as they cook quickly. If you are in a rush and craving squid that gives you a kick then here is the perfect dish for you.

Serves: 4-5
Prep Time: 15 minutes
Cooking Time: 2 minutes 26 seconds

Ingredients
500 grams squid body tubes
5 grams ginger
2 sprigs spring onions
2 garlic cloves
1-2 red Thai chilies
2 red peppers
1 tablespoon groundnut oil
2 tablespoons water
1 tablespoon preserved black beans
1 tablespoon shoaxing wine
1/2  teaspoon 5 spice powder

Method
• Wash, pat dry squid body. With a knife, slit the tube body open and score criss- cross shapes across the body. Cut into 4- 5 pieces. Set aside.

• Pound garlic, ginger, black beans and chilies into a paste. Set aside.

• Deseed and cut peppers into 2 inches wide strips. Wash, cut spring onions into 2 inches strips and set aside.

• Heat a wok on high heat. Add oil. Once hot, add in the paste, 5 spice powder and stir fry for 6 seconds. Throw in the squid pieces and stir fry for 1 minute. Remove squid onto a plate. Set aside.

• Add red pepper strips and stir fry for 20 seconds before adding the shoaxing wine and water. Cook for 30 seconds.

• Return squid back to the wok. Add spring onions and stir fry for a minute. Serve.
